“Before we moved here, we farmed in Breeveld, on the Oude Rijn River near Woerden. My granddad set up the farm there. Now, our 108 cows graze south of the railway line. I’m glad my son Gerben will take over the farm soon. I’ve been making farmhouse cheese since I was fifteen. I use some of my milk to make it and send the rest of the milk to Bleskensgraaf. I love the rich, mature flavour of cheese. A cheese should not be too salty, because that spoils the flavour of the dairy. I’ve shared that bit of farmer’s wisdom with De Graafstroom.”
